We mix all the ingredients mentioned above until we get a dough. Then on the baking tray we put baking paper and incorporate the dough and on top we put another piece of baking paper of the same size to help us to extend the dough better with the rolling pin or similar.

Preheat the oven at 220°C top and bottom and place the dough in the middle tray alone for about 18-20 minutes (remove when it is golden brown).

For decoration I have put: A bed of grated cheese 4 cheeses to taste. Then 1 eggplant cut into very thin slices and passed back and forth in the pan with a few drops of EVOO. 1 package of mini mozzarrelas (125gr already drained) and cut in half. A little more grated cheese 4 cheeses to taste. Arbequina olives to taste. A little salt, ground black pepper and some Provencal herbs.
