Sweet potato and chocolate truffles

Roast the sweet potato until it is soft, I like to bake it in the oven because I like the flavor better, but it can also be boiled or steamed.

Break the chocolate bar and melt it in the microwave, in small batches of 20 seconds, or in a bain-marie.

If the two ingredients are warm, mix and stir until they are well integrated.

We put the mixture in a tupper, let it cool a little and put it in the refrigerator for about 3 hours or until we see that it has hardened.

Remove from the refrigerator, add two tablespoons of cocoa in a separate bowl and make small balls with the mixture and pass it through the cocoa. Put them in a plate/tupper.

For storage, best in the refrigerator to keep them firm (instead of cocoa powder, we can sprinkle them with grated coconut, chopped nuts... a matter of taste 😜).
