Wash and boil the potatoes in their skins in a pot until they are soft, but not too soft. Once cooked let them cool, cut them into cubes (to taste) and add a pinch of salt and a drizzle of olive oil VE.

In a frying pan, poach the onion and when it is golden brown, add it to the potato bowl. We take the mixture to the micro for about 10 minutes.

Next, beat the eggs in a separate bowl and add a little more salt. When the potato mixture is ready, add it to the bowl of beaten eggs.

Heat a non-stick frying pan (not too big) and grease it with a little oil. When the pan is hot enough, add the mixture and let it cook for about 1 minute per side. Ready!🤗
