Chop the pumpkin. Season with salt, pepper and nutmeg. Add a drizzle of oil, the sage leaves and bake in the oven for 40 minutes at 190 degrees.

Mix the Ricotta cheese with half of the Parmesan cheese, lemon juice to taste, salt and pepper.

Once the pumpkin is cooked, mash with a fork. Chop the sage leaves and mix with the Ricotta cheese.

Pre-cook the lasagna sheets in boiling water for 40-50 seconds.

In an ovenproof dish, begin to assemble the lasagna. Pasta-pumpkin-pasta-ricotta and spinach-pasta-pumpkin-pasta-ricotta. Grate the rest of the Parmesan cheese on top and bake in the oven.

Bake for 30 minutes at 180 degrees. Let stand about 20 minutes before serving.
