Shred or grate the cauliflower raw. To obtain 2 sushi rolls I use 400 grams. Set aside on a plate, cover with plastic wrap and microwave for 5 minutes.

Uncover the cauliflower and add 1 tablespoon of rice vinegar or apple cider vinegar.

Place the fake rice on the nori seaweed and place the fillings that you like, I used smoked trout, lambeh yogurt cheese (recipe in my profile) and cucumber, for the other Maki I used canned tuna, cucumber, carrot and cheese.

Close the makis, wrap in plastic wrap and set aside for half an hour in the refrigerator to rest.

Serve with soy sauce
