Creamed spinach with egg

Put the garlic and olive oil in a frying pan and sauté for 5 minutes.

Add the spinach (previously thawed and drained) and salt and sauté for 5 more minutes. You can also use fresh spinach.

Preheat the oven to 200°.

Sift the flour over the spinach, i.e. pass through a sieve and sauté for 1 minute.

Lower the heat a little and add the milk, butter, nutmeg and pepper. Stirring constantly, about 7 minutes until the cream is formed. Remove from the heat.

Divide half of this cream between 2 individual ovenproof casserole dishes or a glass tupperware ovenproof dish.

Sprinkle the cheese on top. I used grated mozzarella cheese. You can use whatever you like.

Open an egg on each casserole dish or container.

Bake for 10 minutes at 200°. Remove from oven and serve.
