Roast the 3 red peppers in the oven in a dish coated with oil, let them cool and remove the skin and seeds.

I have accompanied it with some delicious and super tender zucchini pancakes that I made in a second with 1 grated zucchini, 1/2 sweet onion, 3 tablespoons of oat flour (but it can be any whole wheat or almond flour) 1 teaspoon of baking soda. Grate the zucchini and remove the water with a cloth, then add the chopped onion and the flour and baking soda, form the pancakes and fry them in the pan.
