Roast the 3 red peppers in the oven in a dish coated with oil, let them cool and remove the skin and seeds.

Grind the peppers together with all the other ingredients in the blender without waiting for them to be finely ground, if there are any lumps, the better.

Season with salt and pepper to taste and place several spoonfuls in a bowl, spreading it with a spoon, put more oil on top and a sprig of thyme or olives for decoration

It is served with vegetable crudités or Arab bread cut into triangles or as desired.

I have accompanied it with some delicious and super tender zucchini pancakes that I made in a second with 1 grated zucchini, 1/2 sweet onion, 3 tablespoons of oat flour (but it can be any whole wheat or almond flour) 1 teaspoon of baking soda. Grate the zucchini and remove the water with a cloth, then add the chopped onion and the flour and baking soda, form the pancakes and fry them in the pan.
