Cauliflower and texturized soy crumbs

Cook the cauliflower, mash to the desired texture and mix with the spices: sweet paprika, black pepper, salt and garlic powder (you can add as many as you like). Set aside so that the cauliflower can take on the flavors.

Soak the texturized soybeans, and when ready, drain and mix with the spices. Set aside.

Sauté the garlic, onion, leek, bell pepper and mushrooms. Once soft, add the soybeans and stir for a few minutes so that it loses some water. Then add the cauliflower and ham and stir for 5 minutes. Ready!

Serve with tangerine, orange, grapes, fish, grilled egg... whatever you like.
