I love curry, I make it very often and with various ingredients. It is a good dish to cook when you have leftover vegetables. Today I used lentils, but you can vary and use tofu or chicken.

Sauté all the vegetables in a wok (except the shiitake) with a little garlic and ginger. When they start to brown add the shiitake and sauté for about two more minutes. Tip: Do not add salt until the last moment because otherwise they will release a lot of water and we are not interested.

When the vegetables are sautéed add a can of coconut milk and all the spices. I add cayenne because I like it a little spicy, but you can ignore that ingredient.

Over high heat, allow all the ingredients to integrate and the coconut milk to reduce a little. Add salt and pepper.

I like to accompany it with basmati rice that I cook with a little bit of garlic. The measures I use are one measure of rice for two measures and a little more water. It is great with curry or any other dish.
