Cover the base of a pan with EVOO oil. Turn the heat to maximum and sear the chicken thighs (one minute and a half each side). Remove them after this time and lower the heat to the minimum. Now it is time to poach the carrots and onion for 10 minutes and then add 2 tablespoons of flour to give the sauce more body. Cook for 3 minutes more.
