First, we sauté in EVOO the onion and garlic previously cut. We can also add the sweet potato here, although it would be even better (softer and more cooked) if it is already cooked.

When the onion is transparent, add the red lentils and the spices and a pinch of salt (not too much because the broth that we will add later is already salty), and stir them so that they are impregnated with the flavors.

Add the crushed tomato and coconut milk, stir and add the vegetable broth and the cauliflower in small pieces.

In about 10-15 minutes, it will be done. Stir constantly and, if necessary, adjust: add more stock/coconut milk/water/etc.
