Cut the potatoes, add salt, put them in a frying pan and add oil until they are almost covered. Put them over low heat and leave them until they are soft.

While the potatoes are cooking, put the raw garlic, oregano, parsley and cayenne in a mortar. Mash until a paste is formed.

Add the mixture to the potatoes once they are done and leave on the heat for another two minutes. Remove from the heat and let stand, the longer the more flavor they will get 😉😋.
