Couscous with chicken, tomato and avocado

INGREDIENTS 2 PERSONS 🔸200g of chicken breast 🔸1 glass of couscous 🔸Fresh parsley and chives 🔸1-2 tomatoes 🔸1 avocado 🔸1/2 sweet onion 🔸Curry 🔸Ground garlic 🔸 Extra virgin olive oil from Fiñana (Almería).

Chop the chicken and parsley and add it to a frying pan over medium heat with curry, ground garlic, salt and oil.

In a bowl place a glass of couscous and add a glass of hot water (use microwave) with curry, garlic and let it stand for a few minutes.

Empty the tomato pulp and cut it into squares. Chop the sweet onion

To plate use the mold. - On the base tomato - Next floor couscous with onion - Next layer chicken - Top with chives and chopped parsley. - Place the avocado around the plate
