- These potatoes are NOT peeled, so you must wash them well. To shape them into wedges, cut the potatoes in half lengthwise and cut each half into 3 or 4 wedge-shaped pieces (by placing the knife diagonally).

- Boil the potatoes for 7 minutes. When the 7 minutes are up, drain the potatoes well. - While boiling the potatoes, put in a medium bowl the oil, salt with all the spices except pepper and chili and minus the breadcrumbs.

- In a plate, prepare the breadcrumbs with a little more thyme and paprika plus the "hot" spices and a little more salt. Mix it all well. Now, take the potatoes little by little and coat them in this mixture. Transfer them to a baking tray covered with parchment paper. - Preheat the oven to 200°C a little before finishing the batter.

Put the potatoes in the oven at 200°C and bake for about 15-20 min. Prepare some sauce for dipping 🔥😋
