Put a spoonful of oil in a frying pan and add the chicken pieces and sauté them. Add salt and pepper. Remove the chicken pieces when they are done and set aside.

In the same frying pan without the chicken, add the finely chopped onion and poach it over low heat until it becomes transparent. Never toasted.

When it is poached, add the chicken that we set aside and add the curry and a chili pepper. Stir and then add the coconut milk. Cover and let it cook for 10 minutes.

At the end add a handful of slightly chopped cashew nuts and that's it.

While the chicken was being cooked, we should take a pan of water and bring it to boil. We wash the steamed rice until there is no starch left and the water comes out clean. And we throw it to boil. When it is tender we put it aside and wash it to cut the cooking.
