Clean the squid very well and set aside.

Heat a frying pan with the EVOO. When it is hot, add the onion cut into julienne strips and the chopped garlic. Let it fry for a few minutes.

Once poached, add the squid and cook for 3-4 minutes.

Add the wine, paprika, pepper and salt. Let it cook for about 18 minutes. And that's it!

If it is too runny, cook for a few minutes uncovered over high heat to reduce the sauce.
