In a wide frying pan put EVOO, and we laminate the garlic cloves and we brown them a little.

Put the spinach in the pan. Stir until the spinach is reduced in size. Add a little salt and a pinch of pepper.

In a bowl mix the three eggs, the cream and the grated cheese and add nutmeg, salt and pepper.

Add the spinach and stir well.

In a round container of 23 centimeters in diameter and 10 centimeters high (this is the one I used and it is perfect because being high there is no danger that the liquid comes out when pouring it and with these quantities the quiche is about 4 centimeters high so it is convenient that it is high), Let's make the shortcrust pastry (I used one that my friend gave me, so I don't know the recipe, but I'm sure we can find a healthy one), stick the dough to the bottom (I use baking paper so it won't be difficult to unmold later) and what is not left on the bottom we stick it to the wall.
