Roast the peppers and garlic in the oven with a dash of olive oil and salt.

Once the peppers have cooled, remove the skin and cut into thin strips and set aside (do not discard the oil and juice from the peppers).

Season the breast fillets with salt and pepper and add Provençal herbs to taste (or the spice of your choice... Oregano, basil, parsley...).
