First we make the frying of our pasta. We put a pan with very little oil and while it heats up, we chop an onion into small squares and when it is a little poached, we do the same with 3-4 tomatoes and add them, if they are ripe better, I remove the skin too. We leave about 15 m over medium heat to cook the sauce.

While our onion and tomato sofrito is being made, we put in a saucepan some water, bay leaf, garlic and salt, when the water is boiling we add the pasta (I add a handful per person in case of spaghetti and in case of macaroni, a small cup per person).

When the tomato is already poached, add some natural chicken and arugula, both cut into very small pieces, and also 2 tablespoons of light cream cheese and mix everything well.

Finally, when the pasta is ready, we remove the water, drain and wash it so that it does not stick and add our sorbito together with the pasta in the pan, stir well to mix everything in the fire for 2-3 m and serve. You can also add powdered cheese, already in the dish but in this case I did not add it.
