Bring the water to boil and cut the vegetables into small cubes (you can add more vegetables if you wish).

Put in a frying pan a splash of EVOO and place the vegetables until they are poached, in this step you can macerate the vegetables to taste. In my case sweet paprika and a little curry, but if you want it more oriental you can add soy.

When the noodles have boiled, remove the water and add the vegetables. Stir everything and that's it!

PS: I have already added a splash of soy to the noodles, as the other person who eats with me does not like it and could not add it to the vegetables being poached. But the result is the same.
