Separate the egg whites from the yolks of the whole eggs and whip all the egg whites until stiff (reserve the egg whites).

Mix the rest of the ingredients (the dates previously soaked and crushed with a splash of water). 📣I used the zest and juice of the lemon, it tastes quite lemony, I love the lemon flavor but if you prefer it softer just add the zest or add more dates 😊

Add the whipped egg whites and integrate with the other dough with wrapping movements until everything is integrated.

Pour the batter into a greased or baking paper-lined baking pan and bake at 180⁰ on top and bottom for about 40-45 min.

*You can change the flour for any other flour *I advise you to taste the dough a little bit raw to add more or less dates to taste.
