Watercress and potato soup

INGREDIENTS (for 2 persons): - 1 leek - 1 clove of garlic - 1 potato - 100g watercress - 750ml vegetable stock - 2 eggs - salt - Pepper - EVOO

Clean and chop the leek and garlic. Sauté with a splash of EVOO in a pot until it begins to brown.

Peel and cut the potatoes into small cubes, add them to the pot and pour the broth. Bring to a boil, lower the heat and cover until the potatoes are tender.

Season and add almost all the watercress. We grind a third part of the soup.

Mix both parts and serve with a poached egg.
