This is a recipe for making the most of vegetables 😂. Well, you have to sauté all the desired vegetables in a frying pan with EVOO.

For the omelette, I took two eggs, added a little salt and stirred until everything was well incorporated.

In another frying pan over medium heat put the eggs, and as if it were a crêpe, add the vegetables. Once it is getting golden brown we roll it and put a lid on it so that it is well done on both sides.
