Tofu with curry mushrooms

Cut the tofu into cubes.

Marinate the tofu with soy sauce, curry, thyme, apple cider vinegar and sesame oil.

Add the mushrooms with a pinch of thyme in a hot pan with sesame oil. Cook the mushrooms stirring from time to time.

Once cooked, add the tofu (along with the marinating liquid) and cook for about 3 more minutes, stirring to prevent sticking or burning.
