Mash the banana in a bowl. Add the soy beverage and mix.

Once well integrated, add the flour and the yeast and mix again. Let stand while the pan heats up.

Cook the pancakes in a hot pan with a little olive oil. Turn over when the surface of the pancake is bubbly and leave for another minute.

Serve with toppings of your choice. I used alpro yogurt with coconut, pistachio cream, walnuts and blackberries.
