Dice the onion, carrot and mushrooms.

Add the onion and carrot in a frying pan with a drizzle of oil over low heat, cook until the onion is golden brown.

Add the mushrooms, mix and cook for about 3 minutes.

Add the spinach, reduce, remove from heat.

In a bowl mix half a glass of milk, 1 egg and 1 egg white, mix well.

Add the spinach mixture to the bowl and add a handful of cheese.

Place in different cupcake molds or in a mold and then cut.
