First we chop all the vegetables and fry them, throwing them in order, first onion, then peppers, carrots and finally the zucchini. I did not have eggplant, but if you have it you can also add it.

when all the vegetables are well sautéed and with a soft texture, cook the spirals, I make very few spirals, so that there are always more vegetables than pasta.

Once the spirals are cooked, mix and add a little tomato fried in olive oil. A small amount, to give a touch of color but not too much.

When everything is mixed, put it in a baking dish suitable for oven. I really like the Cristal trays. And we prepare a light bechamel sauce. With semi-skimmed milk.

Put the béchamel sauce on top of the vegetables in the same tray and add grated cheese to melt. Bake in the oven for about 20 minutes and enjoy!
