Put a frying pan with oil and sauté in small pieces, 1 garlic, 1 medium onion, 1 carrot and 200grs of spinach (I cook them before 10 minutes, but if you like the intense flavor of spinach, it is not necessary) season to taste.

When the vegetables are fried, add 30 grams of grana padano cheese powder and mix.

Coat the muffin tins with olive oil to prevent sticking, and heat the oven to 200 degrees.

Beat 2 eggs with salt and spread them in the base of the molds (12 units) uncooked.

Spread the sofrito on top of the egg that we have previously placed, in equal parts in the molds.

Beat another 2 eggs with salt and add on top of the mixture.

Cut each cheese (we need 2) of the small skimmed burgundy type into 6 slices (round total 12) one for each muffin (you could change it for mozzarella) and put a slice on top of each muffin.

Add grana padano cheese on top and bake in the oven for 15 minutes at 200 degrees up and down and then 5 more minutes in the broiler.

Unmold carefully, and ready to eat! As topping we put some pieces of ham (we liked them better) and more grana padano cheese to others. They are delicious! 😋
