Cut the zucchini into thin strips (with grater, knife or whatever we have at hand).

Step 2. Pour a drizzle of extra virgin olive oil in the pan and when it is hot, pour the zucchini strips, cook over low heat (it takes 5-10 minutes).

Step 3. When the zucchini are almost ready in the pan, add a little tomato (the rest we add later when serving on plates).

Serve the zucchini on each plate, add another spoonful of tomato and sprinkle with herbs to taste.
