Quesadilla with 100% whole wheat tortilla

Chop all the vegetables very small. In a large frying pan fry the garlic in a spoonful of olive oil and then add the onion and bell pepper until it is poached. Then add the mushrooms and cook until they have reduced and released broth.

Add to the pan the chicken in small cubes and cook everything together until the chicken is cooked. Add salt and pepper.

Once the chicken is ready, add the fried tomato, oregano, black pepper and chili or cayenne bell pepper in small pieces and let it cook for a while. Set aside but do not let it get cold because you have to put it hot in the wheat tortillas.

When ready, put a wheat tortilla in a small frying pan and make it on one side, turn it over and immediately put some of the reserved mixture in the middle of the tortilla and mozzarella cheese on top, wait a minute and fold the tortilla so that it looks like in the picture. Once the omelet is done (1 minute more), plate and eat.
