Vegetable lasagna with "cheese" gratin

Cut the zucchini into thin circles, as it will take the place of the "dough" of the lasagna.

We choose the vegetables we want to make ratatouille, cut them into small pieces and pass them through the pan with a drizzle of oil until they are well done.

Once they are done, add some crushed tomato in the same pan and let it cook for a couple of minutes more, also add spices to taste.

Take a baking dish, like the one in the photo. Put a little crushed tomato on the base and place the zucchini circles covering the tomato.

Next, put the vegetable and tomato mixture on top of the zucchini layer, creating another layer, and repeat again with the zucchini circles layer and so on until the mixture is finished.

For the "cheese" we peel a potato and a carrot and boil them. We put it in the blender with a little water and 3 tablespoons of brewer's yeast and beat everything. It has to be thick and creamy, so do not overdo it with the water🙏 it is better to add it little by little.

Spread the "cheese" on top of the lasagna and bake in a preheated oven at 200 degrees, about 25 minutes.
