Preheat the oven to 180° C from top and bottom. First the dough. Pour the flour in a bowl, and make a hole in the middle for the water, EVOO (2 tablespoons) and salt (1 teaspoon). Knead until the mixture comes off your hands. If you need more flour, add. Then you can roll out the dough with a rolling pin or apply it directly to the mold and stretch it with your fingers until it fills the mold. Remember to flour the mold so that the dough comes off well. Then take it to the oven for 8-10 minutes to bake the dough.

In a frying pan fry the chopped onion, add the mushrooms and the fried tomato. Ideally have the broccoli previously cooked, but you can use other leftover vegetables in the stir-fry.

In another bowl, beat the three eggs, add the Greek yogurt and the cheese, previously grated (if you do not have grana padano, use any other old cheese). Then add 1 teaspoon of salt, the mustard and spices. Finally, add the fried vegetables, stir and pour over the previously cooked dough. Bake in the oven for 35 minutes. Either hot or cold, it is an excellent and nutritious meal.
