Freeze the pineapple the day before or a few hours before in chunks.

Crush the pineapple, lemon juice and cinnamon 15 seconds progressive speed and put a few spoonfuls in the base of the glass.

To the rest of the crushed pineapple, add an egg white and beat for 2 minutes until it becomes a frothy mousse. Add the mixture in the glasses and ready to serve.
