✳ INGREDIENTS ✳. *for the horchata: ▪︎ 300gr of tiger nut, mine was organic. ▪︎ 1 liter of water. ▪︎ 6 pitted dates. ▪︎ 1 teaspoon cinnamon. *for the cake: ▪︎ 200gr tiger nut pulp. ▪︎ 3 bananas.

✳ HOW IS IT DONE? ✳ To make the horchata, we soak the tigernut milk for 24 hours. We hydrate the dates and crush them with a little of that water until we obtain a paste. Once the time has passed, we drain the tigernut and add it to a blender together with the date paste, the liter of water and the cinnamon. Blend for 5 minutes until it is very well integrated. We pass to a fine strainer and we go pressing until it releases all the liquid that would be our horchata, once ready we keep the leftover tigernut pulp and we keep the horchata, we put it in the fridge so that it is fresh. For the sponge cake we grind the ingredients and put it in the oven preheated to 180° about 45-50 minutes, let it cool and ready.

We pass to a fine strainer and we go pressing until it releases all the liquid that would be our horchata, once ready we keep the leftover tigernut pulp and we keep the horchata, we put it in the fridge so that it is fresh. For the sponge cake we grind the ingredients and put it in the oven preheated to 180° about 45-50 minutes, let it cool and ready.
