Cut sweet potato in half

Season with salt and pepper, add EVOO and bake in the oven for 45-50' at 200 degrees. You can use baking paper on top of the baking tray.

Cut the vegetables into small pieces. Pour the two cloves of garlic and the onion in a frying pan with EVOO. Once the onion starts to become transparent, add the rest of the vegetables and cook over low heat.

When the sweet potatoes are soft, take them out of the oven and with a fork make a hole in the middle to pour the vegetables on top.
