Macaroni with sundried tomatoes in EVOO, pistachio and Gorgonzola cheese

Before you start, I suggest you consult my recipe for "Dried tomatoes in EVOO, basil and garlic" so you will learn how to make them and you will have half of the recipe done.

Cook macaroni according to package directions in salted water. ℹ️ If you add the salt from the beginning, the water will take longer to boil. Wait for it to boil and then season.

Once the pasta is cooked, drain it well. Mix the pasta with a tablespoon of tomato sauce and stir until the macaroni seems lightly brushed with the sauce.

Serve them on a plate and finish the dish with some sun-dried tomatoes, some Gorgonzola cheese crumbled with your fingers, some chopped toasted pistachios and a spoonful of extra virgin olive oil. ℹ️ If you are using my sun-dried tomatoes recipe, use the oil from the canned tomatoes from which you will also get the garlic and basil leaves. If you are not using it, you will have to add it yourself.
