Wash the carrots and put them in the air fryer (with skin and without cutting anything) for 30 minutes at 140° (they will be ready when the skin is detached at first sight from the flesh, if not, put them in for 15 minutes more).

Remove the carrots and let them cool a little.

Put the rest of the ingredients in a covered container and let it rest in the refrigerator.

When the carrots are already warm, peel them (the skin should come off very easily without a knife), and cut them into thin slices with a knife (they are too soft to use a peeler).

We put the carrot slices in the soy preparation and let them macerate for a minimum of 12 hours.

You can now use them to substitute any recipe with smoked salmon, but vegan ☺️
