First we put in a bowl the minced chicken meat, the egg, the spoonful of breadcrumbs, the chopped garlic, the parsley, salt and pepper. We knead it very well, until it is a homogeneous mass. And let it rest while we do the next step.

Secondly, chop the onion and cut the slice of bread into small pieces. In a pot we pour the two spoonfuls of AOVE and we pour the onion, the pieces of bread and the almonds, and we fry it over medium heat. Once all the ingredients are browned, set aside. We pour the ingredients in the glass of the mixer together with the white wine and the turmeric and we grind it.

Thirdly, we put a pot with water, and when it starts to boil, we are making the meatballs and incorporating them into the pot (to make them boiled will be much healthier and will be just as good as fried). Once boiled, we put them aside.

In fourth place, we throw the meatballs together with the sauce, in the pot where the sofrito was made and cover with water until it reduces. Add a little more salt and pepper.

And they are ready to eat. They can be served with a small boiled potato or boiled brown rice.
