Pour the yogurt into a bowl

Add the flour (gluten-free flour, preferably bread flour) together with the yeast and salt.

Stir very well with a spatula until everything is well integrated.

Add the spices and mix well.

Flour the work surface and divide the dough into three parts.

Form them into balls and let stand covered for 20-30 minutes.

Grease a frying pan with EVOO and brown the rolls (flattening them a little) over medium heat with the lid on for about 6/7 min on both sides until golden brown.

⚠️ If you use another type of flour you will have to adjust the quantity, about 130gr of normal wheat flour, whole wheat, spelt .... approx.
