Soak the gelatin sheets. Then dissolve them in the hot coconut drink.

Beat the pitahaya with the raspberries and lemon juice. I also added a teaspoon of liquid Stevia. Pour into a jar and put in the fridge. I discovered that combining these fruits and resting in the fridge gives it a gelatinous texture.

Beat the cheeses, yogurts, vanilla , I also put 150 g of healthy condensed coconut milk ( essential 😍 and already sweetens enough).

Add the gelatin dissolved in the coconut drink and whisk again.

Pour into the jars and put in each one 2 teaspoons of the whipped pitahaya that we have in the refrigerator.

Put it all in the fridge for a few hours until it sets (I accidentally screwed one up and it set vertically 😅).

Garnish with the pitahaya and whipped raspberry (there is enough left over for more recipes). I also put white pitahaya that I had one, pomegranate, blueberries and mint from home.
