Stir-fried quinoa with vegetables and soy sauce

We wash a small glass of quinoa with abundant water.

For each cup of quinoa that we want to cook we have to add 3 cups of water (same measure as the cup we use for the quinoa). Cook until the water is absorbed (about 15 minutes) and set aside.

Cut the vegetables and cook them in phases: first the leek until it begins to brown, add the mushrooms, then the carrot and finally the zucchini. The vegetables have to be a little raw, crunchy are more delicious, don't forget to add salt and pepper!

Finally, add the quinoa and sauté. Add the soy sauce and stir well. If you like, you can leave the pan on the stove to toast the quinoa a little bit, and that's it!
