Risotto with Dried Fruits and Tomato Sauce🍚🍅

In a frying pan or pot fry half the onion and a clove of garlic with a dash of EVOO, add the zucchini cubes and salt and pepper to taste. Leave over medium low heat and once browned, add the rice and mix everything well, add the vegetable stock (previously heated with half of the water; this way we will rectify with water later if necessary). We let it all reduce over medium low heat and stir from time to time so that the rice releases the starch and becomes as mellow as possible. We will add more broth/water as it reduces and the rice is not ready yet; Do not forget to add salt and pepper. All this will take about 20-25 minutes, according to the taste of the rice. Approx😉

Meanwhile, in a saucepan or frying pan, add a small piece of butter together with the other half of the chopped onion. When it melts, add our nuts and stir everything well. Then pour the milk (previously hot), add salt and pepper and add the nutmeg, let it reduce over medium low heat. Optional: We can add any type of cheese to give more taste to the sauce. After about 10 minutes, when we see that the sauce begins to thicken and the milk has reduced, we pour everything in a blender glass to grind to taste, this step is optional since you can leave the sauce without grinding.

Once the rice is almost ready, we can add our nut sauce to integrate everything or plate the rice and pour the sauce on top, as preferred. I also added a chopped natural tomato once the rice was served along with a little oregano to give it a fresh touch. You can add a little grated cheese as well 😊.
