INGREDIENTS (for 2 persons): - 2 large potatoes - 5 eggs - half an onion - 1 clove of garlic - 1 teaspoon cumin grains - 1 teaspoon garam malasa - 1 teaspoon turmeric - half teaspoon coriander powder - half teaspoon ginger powder - half teaspoon hot paprika - EVOO - a pinch of salt

Put the cumin grains and the clove of garlic in a frying pan with a dash of EVOO. Leave over medium heat for a couple of minutes.

Chop the onion and add. Cook for about 5 minutes.

Peel and thinly slice the potatoes and add to the pan.

Leave on the fire for 5 minutes and add all the spices.

When the potatoes are tender, beat the eggs in a bowl and add the potatoes.

Mix well and return to the pan to form the omelet.
