To make the quinoa, soak it the night before. Double the amount of water for the amount of quinoa and cook it for 15 minutes. When it is ready, stop cooking with cold water.

While the quinoa is cooking, chop and sauté all the vegetables with a drizzle of olive oil, salt and a pinch of ground pepper.

Add the quinoa to the pan and add the 2 tablespoons of tomato sauce. Leave it for a few minutes and serve it at the table.
