Tagliatelle with mushrooms and zucchini

Prepare all the ingredients: chop the onion, zucchini and green bell pepper very finely. Wash the mushrooms very well, remove the stem and cut into slices, neither too thick nor too thin (personal taste). We take a pot with water, we let the water boil and we throw the noodles; when they are cooked we throw them in a colander and we let it rest with a little EVOO and a little oregano.

We start with the frying pan with a generous splash of AOVE let it be very hot, add the onion until it browns but without letting it become very dark. Add the zucchini, let it brown and add the bell pepper, poach it well and then add the mushrooms, when everything is well poached and tender, add the tuna, salt, black pepper and oregano. We give it a few turns.

To all these ingredients in the pan well poached, add the previously cooked noodles and integrate well.

When everything is hot, add a few handfuls of Grana Padano, turn off the stove and that's it!
