Chop the mushrooms into very small cubes and cook on the grill for about 5 minutes with a pinch of salt and pepper.

Beat the two eggs with a pinch of salt. Pour a little EVOO on the griddle, add the eggs and stir little by little (medium heat) until you get a texture you like.

Toast the whole wheat bread and assemble the toast. Pour AOVE, scrambled eggs, mushrooms and arugula on top.
