Spinach tagliatelle with salmon (and apple sauce)

Chop and poach the onion with a spoonful of EVOO.

Clean, peel and cut the two apples. With one apple we make the juice: add a little water and mash it. The other apple, in small pieces, we poach it a little with the onion. Add dill to taste and the apple juice and let it boil a little.

The apple and onion mixture is mashed together with the Greek yogurt (it can be substituted by fresh cheese or spreadable cheese) to make the sauce. Add salt and pepper to taste.
