We start by making a pastry cream. To do this, we are going to start by pouring the milk together with the egg yolk and the vanilla pod in a bowl and beat for 1 or 2 minutes until the yolk disassembles and integrates with the milk.

Add the cornstarch and mix for 2 minutes with a wooden spoon until it is dissolved and a homogeneous mixture without lumps is obtained. If necessary, crush the cornstarch balls with the same spoon on the sides so that they do not harden and ruin the homemade pastry cream during cooking.

Place the preparation in a small jug or saucepan on the stove and stir it in and out with a wooden spoon, to prevent the vanilla custard mixture from burning or sticking to the bottom.

Add the sugar. Mix to perfume and flavor the preparation of our easy pastry cream. Once we notice that the vanilla pastry cream begins to boil and is thick, leave a few seconds more on the fire and then remove and let it warm in a cool place.

Preheat the oven and with the pastry cream ready, we start with the puff pastry. We divide it into 6 equal pieces and beat an egg, add 2 teaspoons of powdered sugar, with a brush we spread it all over the dough and when finished, we put it in the oven 200 * C 10 minutes.

When we take it out, we add the pastry cream to each of the pieces on top, a few red fruits to each one, sprinkle a little powdered sugar on top, some mint leaves and... Enjoy!
