Couscous with mint, mango and chicken

Make the couscous: Boil water in a saucepan. In a deep bowl, put the couscous and when the water boils, add the same amount of water as the weight of the couscous. Cover and let stand the time indicated on the couscous package. Approx 5min.

Prepare the chicken: cut the breast into strips and grill them with a little salt. Set aside.

Meanwhile, dice the avocado and slice the mango.

Prepare vinaigrette: In a glass jar put the oil, vinegar, salt and finely chopped mint. Shake to emulsify.

When the couscous is ready, mix with the vinaigrette and assemble the timbale with a ring: couscous layer, avocado layer and couscous layer. Press, remove the ring and decorate with the chicken and mango. Finally sprinkle with a little dill and enjoy!
