Grate the zucchini, chop the onion and mix with grated mozzarella.

Beat an egg and mix it.

Pour flour little by little while stirring.

When the dough is rather manageable, it is taken to the frying pan (medium heat) giving it the shape of a pancake.

Leave it for a couple of minutes and quickly turn it over, it will burn!

Leave a little more and it is finished. It can be eaten hot or cold, I served it with homemade guacamole.
